Earthen kadai
This is a handmade earthen kadai, which is made from naturally excavated clay and the deep-burning process. The clay is naturally alkaline and helps to balance the acidity of the food while retaining minerals such as iron, phosphorus, and magnesium. The porous nature of the clay ensures that heat and moisture are evenly distributed, thus cooking the food properly.
What makes it different?
Unlike regular red pots that are fired once, this handmade earthen kadai is fired twice. During the second firing, pots are stacked and burned with wood and hay at nearly 1200°C. This process makes the earthen kadai stronger, more durable, and naturally black in colour. It can handle high temperatures and works well on a gas stove.
